Cooking with Honey
The main reason we keep bees here at Abbott Farms is for the honey. We have always eaten a lot of honey and cooked with it to some degree. Since one of our goals here is to produce most of the food that we eat, we have stopped using sugar in most recipes and modified them for honey. Some things simply will not work with honey, like fudge and buttercream frosting, and other things, like toffee and brownies, will have a slightly different texture that some people may not like. We have found that the main secret when it comes to making cookies with honey is to decrease the butter in the dough. Desserts made with honey last longer and stay moister than desserts made with sugar. Here are some recipes for cooking with honey:
